There’s a “secret” to excellence: the quality of ingredients and a careful selection of raw materials and suppliers. The rest of the work is done by the chefs’ expert hands and their imagination in creating new recipes and combinations with the very fresh ingredients I use.

In my kitchen there is a constant search for new flavours and sensations which are often the result of new trips and thorough research. Like an alchemist, I make an effort to always try new flavours, to then bring back and translate into new dishes I perfect for my guests.
Knowing what nature can offer in each season is also part of my research, so I offer an “extra seasonal menu” which takes notice of the earth’s and sea’s rhythms. During different times of the year I look for unique products like North American scallops, cicale di mare or porcini mushrooms from Garfagnana, the fine white truffle from San Miniato and many more.
In the lavish, exciting and creative, à la Carte Menu I offer remarkable meat and fish dishes for the ultimate celebration of taste.
Among the exclusive and meticulously studied selection of shellfish we offer the very rare Alaskan King Crab, as well as seafood catalana with lobster or batti batti, langoustine and king prawns.
For cruditè lovers, I have made a very refined, cared for and scrupulous selection.
I have always given special attention to the presentation of each dish.
Read our menu with special dishes from the local market like  squid in egg sauce, monkfish kebabs with prawns and citrus oil or the potato and sea bream millefoglie on pea velouté or
linguine with bean and sage velouté and mussels, clams and squid or, again, sea-bass with sea food and shellfish, oven baked turbot stuffed with confit tomatoes on a bed of endive with soy sauce.
If you prefer meat you could try the delicious Argentinian angus or the unusual American bison, as well as a selection of the best Italian meat.
