Simone Pancetti, born in 1976, began working in the dining room in some prestigious venues in Versilia, in 1998 he moved to London to improve his English, returning to Italy he continued his training in the restaurant sector and graduated as Sommelier Ais in 2012 until he reached first as a collaborator, then as manager of the Alex Enoteca Restaurant.
Gabriele Polonia
Gabriele Polonia Chef, Pisan by birth but Livornese DOC, comes from a family of butchers, started in the butcher's shop and then refined his technique in important Tuscan restaurants until he landed at the helm of the Alex Enoteca Restaurant in 2020.
Gaspari Matteo
Gaspari Matteo, a young Maitre and Sommelier, makes professionalism and seriousness his best weapons, he trained in some Versilia restaurants before arriving at a very young age at the Alex Enoteca Restaurant where he quickly became a point of reference for collaborators but above all for all the customers of the restaurant.
